Ingredients:
6 oz egg beaters or egg whites
1/4 cup mushrooms
1/4 cup chopped onions
1 oz low fat cheddar cheese shredded
1 6" flour tortilla
1 tbsp. chopped parsley
cooking spray

1. Heat tortilla until warm.
2. Spray and heat a skillet.
3. Saute onions until brown, add mushrooms, and
heat until mushrooms are soft.
4. Add egg whites or egg beaters and cook and
then add shredded cheddar and fold in parsley.
5. Roll in soft tortilla and serve.
6. Optional garnish with salsa.
