
| Apple Spice Muffins 2 cups whole-wheat flour or wheat blend flour 1/3 cup sugar (splenda) 3 tsp baking powder 1 tsp salt 1 tsp cinnamon 1/2 to 1 tsp nutmeg (to taste) 1 cup skim milk 1/4 cup oil 1 large egg, beaten 1-1/2 cups finely diced apple (unpeeled) Preheat oven to 400 degrees. Coat bottoms of medium muffin cups with nonstick cooking spray or use paper liners. In bowl, mix flour, sugar, baking power, salt, cinnamon and nutmeg into bowl. In separate bowl, mix milk, oil and egg. Mix with dry ingredients just until moistened. Batter will remain lumpy. Fold in apples. Fill cups two-thirds full of batter. Bake in preheated oven 18 to 20 minutes until golden brown or until toothpick poked in center of muffin comes out clean.
