Broccoli Cashew Salad
Serves 6 (1/2 cup)
3 cups chopped fresh broccoli
1/2 cup seedless raisins
1/4 cup finely chopped onion
6 tbsps chopped cashews
1/4 cup purchased real bacon bits
1/2 cup fat-free mayonnaise
1 tbsp white distilled vinegar
1/4 cup Splenda Granular
In a large bowl combine broccoli, raisins, onion, cashews,
and bacon bits. In a small bowl, combine mayonnaise,
vinegar, and Splenda. Add dressing mixture to broccoli
mixture. Toss gently to coat. Cover and refrigerate for at
least30 minutes. Gently stir again just before serving.
