1/4 cup dry bread crumbs
3 tbsps fine-chopped oil-roasted, unsalted macadamia nuts
1 tbsp chopped parsley
1/4 tsp chopped fresh thyme
1/4 tsp fresh-ground black pepper
1/2 tsp grated lemon peel
16 ozs boneless, skinless chicken breast
1/4 cup nonfat milk

Preheat oven to 450 deg F. Combine bread crumbs, nuts,
parsley, thyme, pepper and lemon peel; spread on a piece of
waxed paper.
Dip each piece of chicken breast in milk, then coat with nut
mixture. Place in a single layer in a baking pan. Bake 10 minutes
until crisp. If crumbs are not browned, you can run meat under
broiler until golden.
Serve hot.
