Honey-Lime Glazed Pork Tenderloin


1 lb pork tenderloin
1/2 tsp salt
1/8 tsp black pepper
Pinch cayenne pepper
2 tsps canola oil
1 clove garlic, minced
2 tsps minced fresh ginger
1/4 cup lower-sodium chicken broth
2 tbsps lime juice
1 tbsp honey
1 tbsp "lite" soy sauce

Preheat the oven to 450 degrees. Coat a shallow baking sheet with
cooking spray. Sprinkle the salt and pepper over the tenderloin and
roast in the center of the oven, turning once, for 22 minutes, or until
a meat thermometerinserted in the center of the tenderloin registers
140 degrees.Meanwhile, heat the oil in a small saucepan over medium
high. Add the garlic and ginger and cook, stirring, 30 seconds. Add
the broth, lime juice, honey and soy sauce and bring to a boil. Boil 4
to 6 minutes or until the consistency of syrup.Brush the glaze on the
tenderloin and return to oven. Roast another 2 to 3 minutes, turning
once, until the glaze is deeper in color and baked on. Remove from
the oven and let rest for 2 to 3 minutes before cutting across on a
diagonal into 1-inch slices.
