Oatmeal Chip
Cookies
1 tsp baking soda
1 tsp hot water
1-1/2 cups Splenda Granular
2/3 cup reduced-calorie margarine
1/3 cup unsweetened applesauce
2 eggs or equivalent in egg substitute
1-1/2 tsps vanilla extract
1 tsp table salt
1-1/2 cups all-purpose flour
2 cups quick oats
1/2 cup mini chocolate chips
Preheat oven to 375 degrees. Spray 3 baking sheets with
butter-flavored cooking spray. In a small bowl, combine
baking soda and hot water. Set aside. In a large bowl,
cream Splenda, margarine, and applesauce, using a sturdy
spoon. Stir in eggs, vanilla extract, baking soda mixture,
and salt. Add flour and oats. Mix gently just to combine.
Fold in chocolate chips. Drop batter by tablespoonful onto
prepared baking sheets to form 32 cookies. Lightly flatten
cookies with the bottom of glass sprayed with butter
flavored cooking spray. Bake for 8 to 9 minutes. Do not
over bake. Place baking sheets on wire racks and let set
for 5 minutes. Remove cookies from baking sheets and
continue to cool on wire racks.
