Ingredients:
1/2 cup vital wheat gluten flour
1/4 cup oat flour
1/4 cup soy flour
2 eggs
1/2 cup heavy cream
3/4 cup water
1/2 tsp salt
2 tbsp melted butter

Preheat oven to 425°F.

Mix together first seven ingredients plus 1 tablespoon of the melted butter
with a mixer. Don't overmix. Take remaining 1 tablespoon of melted butter
and divide it among the 6 cups of a popover pan (or large 6-muffin pan) to
coat inside of each cup. Pour the batter into the 6 cups, dividing as evenly
as possible.

Place pan in middle of oven and bake for 20 minutes at 425°F, then turn
down oven to 350°F and bake an additional 10 - 15 minutes until nicely
browned. Serve warm with plenty of butter. Great "dinner roll" alternative!

Makes 6 large popovers. 5 carbs per popover.
