1 large eggplant, peeled and slice
1 green bell pepper, sliced
2 red bell peppers, sliced
1 red onion, sliced
1/4 cup olive oil

Preheat oven to 350ºF.
Place eggplant, peppers, and onion in a nonstick baking dish. Drizzle with olive oil.
Bake 20 minutes, basting regularly. Arrange vegetables on a serving dish.
