Oven at 400
Take small pan with "lip" on it - line with foil for easy cleanup.  Spray with Mazzola
pure olive oil cooking spray (or your favorite but olive oil is good for you . . . )

Layer walnuts in bottom of pan.  Spray top side of walnuts with a bit of the olive oil
spray.  Sprinkle on Cajun seasoning and lightly coat walnuts.  Cook for 10 to 12
minutes until lightly browned and a bit crispy (shaking pan during cooking so they
all get covered with the seasoning.)

Walnuts are fairly low carb (like 2 per 1/4 cup) and have Omega 3 and can lower
cholesterol.   They are great while still warm too.  I often eat with a piece of cheese
so it is a little more filling.

I still want to try it with different seasonings - could be good with cinnamon or your
favorite spice.
